Vegan Brownies

You don't hear that phrase very often, I'm guessing. I made some. The first try for vegan brownies was a regular recipe with egg replacer and vegan butter instead of eggs and butter. In addition, there was flat (old) baking powder. I'm not sure which of the three ingredients (egg replacer, vegan butter or flat baking powder) caused the problem, but I think it was the flat baking powder. The brownies were very gooey and resembled fudge, not entirely a bad thing. We ate some.

Since I was a little worried the vegan butter might have also contributed to the weird texture, the next attempt was this recipe. I got new baking powder and the texture was great. They were good--even better with banana ice cream (did I tell you about that?).

I'm now thinking about my next attempt and maybe I'll try this recipe.

It's been a lazy fun weekend. It was MWH's birthday weekend! Today, we're going to plant in the new garden planter box that MWH built. (I'll have pictures on the "other" blog.)

Yum and easy!

Trader Joe's has organic broccoli slaw already shredded! (And it's really cheap inexpensive!) I made a dressing with ~ 1/2 a cup veganaise, 1/4 cup apple cider vinegar and 2 heaping teaspoons of sugar. I chopped up about 2 tablespoons of onion and then I mixed the dressing, and put it all together. It took about 5 minutes. Later today, I'll chop up an apple and add walnuts and cranberries. I don't know whether MWH will like it or not, but I do! And it's super yum! I love slaw on tortilla chips (is that weird?).

[Sidebar: Heh, what don't I love on tortilla chips? There is actually one thing, it's hummus. I DO NOT like hummus on tortilla chips.]

another recipe
for when I get bored of "slaw" dressing. (I copied and pasted the recipe in case that blog goes away.)

12 oz bag (5 cups) Organic Broccoli Slaw
1/2 cup Country Italian Vinaigrette
1/3 cup sliced green onion (2 stalks)
1/2 cup Raw Sunflower Seeds
1/2 cup Slivered Almonds

Toss the dressing with the slaw and toss until evenly distributed.
Add remaining ingredients and combine.
Chill and Serve.
Serves ~8

That Trader Joe's blog is fun and I'll be exploring it for ideas. I recently bought a jar of sunflower butter and I decided I didn't like it. I was wondering if I could make cookies with it. I found the answer here... but I'm not sure if I should make them or not... GREEN??? Hrm.

going to not take on anything crazy for a while...edited

Really!

I agreed to do something major at the girls' school. It took a lot of time. It culminated yesterday. I think it worked out, okay. There's a few things I'd do different next time, most notably saying NO! Okay, I'll probably do something similar again, but not for a while!!

I'm cooking dinner right now--black beans simmering on the stove, and rice cooking in the rice cooker. Soon I'll sauté up an onion and pepper and we'll have it all together... (Or rather, MWH and I will have the onion and the pepper added to the beans and the girls will have the beans plain and eat red pepper on the side.) Here's the recipe, roughly...

1 lb black beans, soaked
8 cups water
1 tsp (or to taste) salt
Couple of garlic cloves (to taste)
1-2 tsp of cumin

Simmer forever.

Then cut up
1 onion
1 red pepper
sauté in 1 TBSP oil
add another teaspoon cumin

Then take some water from the beans and add it to the sauté.
Cook over low heat for 30 minutes.

YUM! (Edited, the beans, cooked this way, are kind of plain. We (MWH, me and oNe) spice them up by pouring salsa on them at the end. Three-a and twoK like them plain and mashed with a little mozzarella cheese melted on top.)

So, anyway, I'm cooking beans and rice and Alfr3d (yes, our 3rd roomba) is running and cleaning the dining room floor and 'm blogging. If I'm not a master of multi-tasking, I don't know who is!

Infrequent

I'm being such an infrequent blogger that it's kind of ridiculous, but hey, maybe I'll make a comeback or maybe I'll close this one down and turn just to the "other blog." Part of the reason I am not blogging here is that I don't feel it's right to hijack the blog with all of my issues and not talk about the girls.

I could talk all about the girls here, and there's a lot I want to record, but lately, the girls need me to be present with them and not just writing about them. That's fair. In the mean time, I'll just give short updates...

oNe just finished her Science Fair project and did a really good job on it. Next year, we may have two projects to juggle. Ai-yi-yi. I'll have to take a week or two off to make it happen. I'm really proud of oNe. She learned research skills, can almost touch type (at 8!), and seems excited about science. I got to see a lot of growth between her capabilities of last year and this year. Last year, it took forever for her to type. This year, she was quite fast. What I should do, is compare her board from last year to the one from this year and see how many scientific concepts she covered last year versus this year. (How geeky would that be?)

twoK and I got to go on a school field trip on Thursday. It was so fun. I love field trips. She is so different from oNe. With oNe, I had to worry about her getting into trouble and doing something dangerous, with twoK, she just stays with the group and absorbs the experience. She made a really funny pun on the trip... Eggsactly, she said when we were looking at the eggs with the chickens. (Guess where we went.)

Three-a is my little sweetheart. She manipulates me to no end, but that's her job as baby, right? She clings tight to me whenever I have to leave (for work, at night at the end of snuggle time) and she tells me I should just stay with her always. I wish I could, but I don't think that would be very good for either of us.

This weekend has been great so far. On Friday night, we (MWH and I) got to have dinner with our 3 best couple friends. I'm still stuffed from the food. It was a great evening and we didn't get home until 11:30. Wowza, I felt like a rebellious teenager. Yesterday we walked around [big private] University campus with the girls and with a friend who has a dog (and is ready to give birth to her first child any second).

Today, twoK desperately wants to go to the Children's Museum--she's been begging for weeks. We'll go. MWH and I are a little burnt out on it, but it will be fun.

Oh, and remember my throat? I found this. It sounds exactly (eggsactly) like what my throat feels like. Remember this post? The number one thing I listed as a potential cause was stress. Yup. I think stress does weird and wacky (and not good) things to a body. I'm concentrating on relaxing.
